Aubergine seed, Black Beauty, produces large purple fruits, with good flavour and texture, and are a favourite in Mediterranean cooking. Aubergines are best grown in a greenhouse or polytunnel, due to the higher temperatures that they require. They provide a good source of dietary fibre.

To Sow and Grow

Sow indoors, a warm kitchen windowsill is all that you need for starting these seeds. Sow 0.5cm (¼") deep, thinly in a tray or pots of compost. A temperature of 20-25ºC (68-77ºF) is ideal. Keep moist.

Seedlings usually appear in 14-21 days. Transplant to individual pots when large enough to handle. Grow on in cooler, but not cold conditions. Plant out in large pots, growing bags or the greenhouse border. Provide support with canes if necessary.

Aubergine plants may be grown outside in a warm, sunny sheltered location. However, outdoor crops will be later and smaller.
